Fermentation is the most powerful asset to a zero waste food system.

That's why wev'e decided to build a fermentation factory.

We will cultivate large quantities of a unique product called kojian ancient preparation. It’s the key ingredient to the beloved umami flavours found in miso, soy sauce and fish sauce. 

We’re offering chefs, brewers and bakers fresh koji to create delicious products while minimising waste.
